Ingredients

  • 1 cup French lentils
  • 5 cups water
  • 1 cup cherry tomatoes, halved
  • 2 sticks celery, sliced
  • 1/3 cup kalamata olives, halved
  • 1/2 cup crumbled feta
  • 1/2 small red onion, diced
  • 1/2 bunch Italian parsley, chopped
  • 1/4 cup olive oil
  • 3 Tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cane sugar
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon sea salt

Cooking Steps

    Place lentils and water in a medium size saucepan and bring to a gentle simmer. Cook until lentils are just tender, approximately 35 minutes. Drain and cool on a baking sheet.

    In a medium size mixing bowl, place cooled lentils, tomatoes, celery, olives, feta, onion and parsley.

    Whisk together dressing ingredients and toss with salad. Adjust seasoning to taste and serve.
